Winter: Classic Beef Stew

Instructions

1. In a large pot, heat olive oil over medium heat. Add beef and brown on all sides. Sprinkle with flour and stir until coated.
2. Add onion and garlic, cooking until softened.
3. Pour in the beef broth, add the carrots and potatoes, and season with salt, pepper, and thyme.
4. Bring to a boil, then lower heat and simmer for about 1.5 to 2 hours, or until the meat is tender.
