Autumn: Pumpkin Spice Muffins

Instructions
1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
2. In a large bowl, combine the pumpkin, oil, sugar, and eggs until smooth.
3. In another bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
5. Pour the batter into the muffin tins and bake for 20-25 minutes or until a toothpick comes out clean.
